Summer Porridge

In the UK, summer has limped along so far with not enough constant sunshine to leave the Bar-b-q out permanantly. We are reaching for salads and strawberries one day and craving the hot warming foods the next.

Enter summer porridge - which gives the best of both worlds in this uncertain season!

I have written about the wonderful benefits of proper porridge oats (avoid the instant packet mixes) before - see "Power of Porridge" top tip. Here is a way of enjoying this wonderful food without having to face a bowl of steaming gruel when the sun is threatening to shine. The Swiss are full of good ideas and this summer porridge is a version of their Burcher Muesli. It contains many wonderful ingredients, to keep you energised to enjoy the long summer days to the full - when the sun eventually shines!

100g rolled oats - organic is best
250ml water
200g natural low fat yogurt - organic is best
1 large ripe banana, chopped
100g fresh berries eg blueberries, strawberries, raspberries, blackcurrants
50g mixed nuts and seeds - eg chopped Brazil nuts, toasted flaked almonds, pumpkin seeds, sunflower seeds
1 chopped apple
1-2 teaspoons honey, maple syrup or date syrup - if required

Soak the oats in the water for about 1 hour. Drain off any excess water and mix porridge with natural yogurt, berries, banana and apple.

Divide into two large portions and drizzle with runny honey, date syrup or maple syrup before serving.
